Ingredients:

The following ingredients make about 10 luchis:

*Maida/Flour - 1 cup

Salt - 1/4 tsp

White Oil - 2 tbsp + 1.5 cups (for deep fry)

* Pillsbury self-rising flour may be used

 

 

 

 

 

 

Preparation:

  1. Mix maida, salt, and 2 tbsp oil thoroughly for about 5 min.

  2. Then gradually add water to make a tight dough. Preferably make the dough an hour prior to frying.

  3. Make 10 small balls and roll them flat into thin pancake-like shape.

  4. Heat 1.5 cups of oil in a kadai. oil should be very hot.

  5. Turn the heat to medium and add the pancakes one at time.

  6. Fry till both sides are light brown.

  7. Remove and keep on a paper towel.

 

Serving Suggestions:

Serve with begun bhaja or alu-pyaj bhaja or alur dom. Luchi-mansho is a Bengali favorite.
