Ingredients:

The following ingredients will make 14-16 vadai:

Urad Dal - 2 cups

Coriander leaves - 1 sprig, chopped

Green chillies - chopped (depending on individual requirement)

Ginger - 1 inch cut into juliennes

Salt - 1 tsp and then adjust as per taste

White Oil - 2 cups*

 

* The vadai needs to be deep fried and thus requires more oil

 

          

 

 

 

 

 

 

 

 

Preparation:

  1. Soak urad dal in water for 4 hours.

  2. Grind with minimum water to a coarse consistency. Make the consistency as tight as possible.

  3. To the mix add coriander leaves, green chillies, ginger, and salt.

Cooking procedure:

  1. Heat oil in a kadai. Oil must be steaming hot.

  2. Use a vadai maker if available or simply take a palmful of the mix and add to the oil giving it a round shape

  3. Fry on medium heat till they are golden brown

  4. Remove the vadai from oil and place them on a paper towel to soak up oil.

 

Serving:

Serve hot with sambar and chutney. Good for breakfast, and teatime. A South Indian delight.
