(Eggs on Potato Sticks)

Serving Size: 2 persons

Ingredients:

Eggs - 4

Potato - 4 medium, cut into thin strips

Onion - 1 small, finely chopped

Ginger - 2 tsp, cut into juliennes

Garlic - 2 cloves, finely sliced

Green Chillies - 4, chopped

Salt - 3 pinches

Oil - 4 tbsp

 

 

 

 

 

Cooking procedure:

  1. Heat oil in a kadhai. Fry potatoes for 4-5 minutes on medium-high heat till potatoes just begin to brown.

  2. Turn heat to medium. Add ginger, garlic, and green chillies. Continue to fry for 3 minutes on medium heat.

  3. In the meantime, grease an oven proof dish and preheat the oven to 350° F. Remove the fried potatoes from kadhai and place on the oven proof dish (photo on the left).

  4. Sprinkle salt on the potatoes. Break open eggs on top of the potatoes (keeping the yolk intact). (See photo in the center)

  5. Place the dish in the oven and bake for 20 minutes or till the egg sets firmly (Photo on the right).

  6. Garnish with deep fried onion rings or chopped spring onions.

 

Serving:

Serve with toasted bread and butter.
