(Green Moong Dal with Eggs and Vegetables)

Serving Size: 2 persons

Ingredients:

Whole Green Moong Dal - 100 g

Onions - 1 small, finely chopped

Ginger - 1 tbsp, finely chopped

Garlic - 4 cloves, finely chopped

Tomato - 1 medium, chopped

Fenugreek/ Methi Powder - 1/4 tsp

Turmeric - a pinch

Fenugreek Leaves/ Methi Saag - 1/2 cup, leaves only

Capscicum - 50 g, small cubes

Green Chillies - 2, chopped

Dim/Egg - 2

Oil - 3 tbsp

Salt - To taste

 

 

 

 

 

Preparation:

  1. Wash and soak dal overnight.

Cooking procedure:

  1. Pressure cook dal with turmeric, salt, and 1and 1/2 cups water (4 steams). Keep aside.

  2. Heat oil in a kadhai and fry onion till soft on medium heat (about 2-3 minutes).

  3. Then add ginger, garlic, tomato and fry well for 2-3 minutes or till oil separates.

  4. Add beaten eggs and stir well for a minute. Then add cooked dal and let come to boil. Cook for 2-3 minutes.

  5. Then add capsicum, methi saag, methi powder, green chillies and turn off heat.

  6. Keep covered tightly for 5 minutes before serving.

Serving Suggestions:

Tadka Dals are good accompaniments with rotis.
