Fish with Vegetables

(White Pomfret Fish)

Ingredients:

Fish - 4 small whole white pomfret

Vinegar - 1 tsp

Aji No Moto - one pinch

Ginger - 1 tsp, grated/paste

Garlic - 1 tsp, grated/paste

Turmeric - one pinch

Red Chilli powder - 1/2 tsp

Pepper - 1/2 tsp

Soya Sauce - 1tsp

Tomato sauce - 1 tsp

Cornflour - 1 tbsp

Salt - to taste

Sugar - 1/2 tsp

Oil - 1/4 cup

 

Vegetables - 2 cups all together, cut into cubes

Carrots, Beans, Tomato, Cauliflower, Capsicum (Bell Peppers), Scallions, Onions, and Peas

 

 

 

Preparation:

  1. Rub a pinch of salt, turmeric, chilli powder on fish.

  2. Marinate the fish with vinegar and aji no moto. Time = 20-30 minutes

Cooking procedure:

  1. Heat oil in a kadhai and fry the fish well on both sides. Remove and keep aside.

  2. To the same oil add ginger and garlic paste. Fry on low heat.

  3. Add the vegetables and fry for 2-3 minutes on medium-low heat.

  4. Add water to cover the vegetables. When vegetables are almost cooked add the fish and simmer for 3-4 minutes.

  5. Then add chilli powder, pepper, soya sauce, and tomato sauce. Mix and simmer for 3-4 minutes.

  6. Mix cornflour well in 2 tbsp milk and add to thicken the gravy. Then add sugar and a pinch of aji no moto. Remove from heat.

Note: The vegetables should be crisp but cooked.

Serving:

Serve hot with Chinese fried rice or white rice. Bhetki may be substituted with Red Snapper Fish available in most US grocery stores.
