(Boiled Potatoes & Tomatoes)

Ingredients:

Alu/Potato - 4, halved

Tomato - 1, roughly chopped

Onions - 1 small, finely chopped

Ginger - 1/4 inch, finely chopped

Green Chillies - 3 (optional), chopped

Coriander leaves/Dhonepata/Cilantro - 1/2 cup, chopped

Whole Red Chillies - 2

Salt - To taste

Oil/Ghee - 1 tbsp

 

 

 

 

 

 

 

 

 

 

Cooking procedure:

  1. Boil potatoes, peel & mash

  2. Heat oil/ghee in a frying pan, add red chillies & fry for 30 sec

  3. Add onions, ginger, green chillies, and tomato and fry for 1 min

  4. Lower the heat, add mashed potatoes and cook for 5 min on low heat

  5. Garnish with chopped coriander leaves

 

Serving Suggestions:

Serve hot with steamed rice or with khichdi.
