(Boiled Mixed Vegetables)

Ingredients:

Alu/Potato - 2, peeled and halved

Mulo/Radish - 4 pcs each 2 inch long

Phulkopi/Cauliflower - 4 florets, big

Kumro/Pumpkin - 2 pcs each cut into 2 inch squares

Mishti Alu/Sweet Potato - 1, halved

Onions - 1 small, finely chopped

Green Chillies - 3 (optional), chopped

Ground Pepper - 1 tsp

Salt - To taste

Oil/Ghee - as indicated

 

 

 

 

 

 

 

 

 

 

Cooking procedure:

  1. Cut all the vegetables as indicated.

  2. Boil the cut vegetables by either of  3  methods:
    -on cooking stove with cover for approx 10 min;
    -pressure cook on high heat for approx 3 min; 
    -microwave on high for 10-12 min (use a microwave  safe bowl containing water).

Check that the vegetables are cooked but it is important that they are not overcooked..

  1. Drain water and let vegetables cool till they can be touched.

  2. Mash boiled vegetables with oil/ghee, salt, pepper, green chillies, and onions.

 

Serving Suggestion:

Serve hot with steamed rice or with khichdi. A great preparation for those in a hurry or no cooking experience.
