(Moong Dal with Vegetables)

Ingredients:

Moong Dal - 300 g

Methi/Fenugreek Seeds - 1/2 tsp

Jeera/Cumin Seeds - 1/2 tsp

Shorshe/Mustard Seeds - 1/2 tsp

Turmeric/Haldi - 1/4 tsp

Dry Red Chillies - 2, whole

Ginger - 1 inch, chopped finely

Sugar - 1 tsp

Salt - To taste

Ghee - 2 tbsp

White Oil - 2 tbsp

Vegetables:

Tomato - 1 large, quartered

Potato - 2, halved

Cauliflowers - 4 florets, big

Carrot - 1 big, cut into 2 inch pieces

Green beans - 6, cut into 2 inch pieces

Green peas - 1/2 cup

 

 

 

 

 

Cooking procedure:

  1. In a frying pan, add 1 tbsp of white oil and fry all the vegetables together for 5 min on medium heat.

  2. In the meantime wash the dal thoroughly and add 3 cups of water to it. Add turmeric, salt, ginger paste and the fried vegetables from step 1 and set up to boil.

  3. Cook until the dal and vegetables are cooked, remove and keep aside.

Spice the Dal

  1. Heat 1 tbsp ghee and 1 tbsp oil, to it add whole cumin, mustard and fenugreek seeds.

  2. Fry the spices for about 30-60 sec until the the seeds start spluttering.

  3. Add cooked dal+vegetables and remaining 1tbsp ghee, mix well.

  4. Bring to boil on low heat and remove.

 

Serving Suggestions:

This dish is served hot with steamed rice accompanied with fries, pickles, or a salad.
