(Curried Green Beans)

Serving Size: 2-3 persons

Ingredients:

Green Beans - 200 g

Onions - 1 medium, finely sliced

Tomato - 1 small, sliced

Garlic - 1 clove, chopped

Ginger - 1/4 inch, cut into juliennes

Curry leaves - 6-8, roughly chopped

Coconut - 1 tbsp, shredded

Bengal Gram (Chana Dal) - 1 tsp

Mustard Seeds - 1/4 tsp

Turmeric - 1/4 tsp

Red Chilly Powder - 1/4 - 1/2 tsp (by choice)

Salt - To taste

Oil - 2 tbsp

 

 

 

 

 

 

 

 

 

 

 

 

 

Preparation:

  1. Cut beans into 1 inch long pieces.

  2. Add beans to boiling water with salt and turmeric and let boil for 5-7 minutes with cover. Drain water and keep aside. 

 

Cooking procedure:

  1. Heat oil in a pan. To it add mustard seeds, bengal gram, and curry leaves. Fry for 30 sec or until seeds start to splatter.

  2. Add onions, garlic, and ginger. Fry for 2 minutes.

  3. Add tomato and fry for 2 more minutes.

  4. Add parboiled beans, turmeric, red chilly powder, and salt. Fry for 6-7 minutes on medium-low heat till beans are cooked.

  5. Add shredded coconut and mix well for 1 minute. Remove from heat.

 

Serving Suggestions:

This curry may be served hot with sambar and masoor dal.
