(Drumstick and Mixed Vegetable Medley)

Serving - 4 persons

Ingredients:

Mulo/Radish - 1, cut into 1 inch long thick pieces - about 12 pices

Gajor/Carrots - 1, cut into 1 inch long thick pieces - about 12 pieces

Alu/Potato - 2 medium, peeled and quartered

Phulkopi/Cauliflower - 8 medium size florets

Shojne data/Drumsticks - 1-2 inches long - about 8-10 pieces

Green Chilly - 3-4, deseeded and slit

Ginger - 1 tsp, julienned

Tomato - 1 small, sliced

Coriander leaves/cilantro - 2 tbsp finely chopped

Paanch phoron/Five spice mix - 1/4 tsp

Shukno Lonka/Dry Red Chilly - 1               

Haldi/Turmeric powder - 1/4 tsp

Kashundi - 2 tsp (see note)

Salt - To taste

White Oil - 1 and 1/2 tbsp

 

  

 

 

 

              

              

 

Cooking procedure:

  1. Heat oil in a kadhai.

  2. Add paanch phoron, and dry red chilly. Fry for 30 sec till seeds splutter.

  3. Add all cut vegetables (except green chillies) along with ginger and tomato. Mix well for a minute, cover kadhai and turn heat to medium low. Cook for 5-6 minutes.

  4. Add turmeric powder, salt and continue to cook covered on low heat. Sprinkle little water if the vegetables tend to get charred.

  5. When the vegetables are close to done (not overdone!) add kashundi and green chillies. Mix well and continue to cook covered till vegetables are cooked to your desire. Again sprinkle water if required.

  6. Just before removing from heat add 2 tbsp of finely chopped coriander leaves.

 

Note: Use mustard seed paste if kashundi is not availabe.

 

Serving Suggestions:

Serve hot with rice and dal.
