 This is a 5 minute recipe and is the choice for a curry with rotis or even with upma or poha....   

Serving Size: 2 persons

Ingredients:

Tomato - 2 medium, slices (thick); the tomatoes should be tight and not ripe or soft

Onions - 1 medium, sliced

Peanuts - 1 tbsp, dry roasted and ground (optional)

Mustard Seeds - 1/4 tsp

Whole Red Chilli - 1

Curry Leaves - 6

Cilanto/Dhaniya - 1 tbsp, chopped

Green Chillies - 2, slit

Turmeric - a pinch

Salt - To taste

White Oil - 3 tbsp

 

 

 

 

 

Cooking procedure:

  1. Heat oil in a kadhai. Add mustard seeds, curry leaves, and dry red chilly.

  2. Add onions and fry on medium heat for 1-2 minutes till they begin to soften. Do not brown the onions.

  3. Add tomato, turmeric, and salt. Fry on medium heat for 3-4 minutes.

  4. Add ground peanuts, mix, and remove from heat. Adding peanuts is optional and may be skipped.

  5. Garnish with cilantro (dhaniya) and green chiliies.

 

Serving:

Serve with rotis, or with upma.
