Serving Size: 4 persons

Ingredients:

Spinach/Palong Shaag - 500 g, chopped finely

Green Peas - 1/2 cup

Potato - 1 medium (about 100 g), diced into small cubes

Bori (preferably Urad dal) - 10-12

Salt - To taste

Oil - 2 tbsp

   

 

 

Cooking procedure:

  1. Heat oil in a kadhai. Fry potatoes till golden brown and keep aside.

  2. Fry boris in the same oil till they turn brown and crunchy. Keep them aside for garnishing.

  3. To the remaining oil, add chopped spinach, and green peas. Turn heat to medium-low and cook covered.

Note: Fresh spinach leaves do not require additional water but if using frozen chopped spinach then add little water at a time for cooking.

  1. When spinach is almost cooked add fried potatoes, and salt. Cook till potatoes are done. 

  2. Remove from heat. Garnish with crushed fried boris.

 

Serving Suggestions:

Serve  with hot rice.
